Made from hand-picked fruit from the droopy clone (half cane, half spur pruned). Fermentation included approximately 10% whole bunches to encourage gentle maceration and lift aromatic detail.
Matured with 25% new oak, slightly higher than typical for Pinot, bringing out the subtle flavours of our fruit and highlighting its depth.
